Through random grocery donations, I acquired four boxes of corn muffin mix. I had pulled a 3-cup bag of frozen hand-picked blueberries from the freezer the other night, in the hopes that I would eat those instead of some other sugary junk. For some reason, I had thought about making blueberry corn muffins. I looked up recipes on the Internet, all of which sounded delicious, but also required ingredients I didn't have. So... I made two boxes of Jiffy Corn Muffin mix according to package directions, dumped in about 2 cups of blueberries... and Voila! Blueberry Corn Muffins, in a literal Jiffy!
